MANTA welcomes Edo López from Edo Kobayashi group — founder of more than 20 restaurants across Mexico, the US, and Spain — for an unprecedented collaboration with Chef de Cuisine Abisai Sánchez and the world of Enrique Olvera. Local Baja ingredients, Japanese technique, and Mexican soul come together for a special anniversary evening, available as a tasting menu or à la carte, with the sea as the backdrop.

Originally from Tijuana. Founder of the Edo Kobayashi group. Ten years building an authentic Japanese cuisine rooted in Baja California — from Rokai, his first izakaya, to a network of more than 20 restaurants spanning Mexico, the United States, and Spain. His cuisine is born from the Pacific and from memory.
