MANTA was conceived by Michelin-starred Mexican Chef Enrique Olvera, whose restaurants — including Pujol and Cosme — have redefined modern Mexican cuisine on the global stage. Known for honoring tradition while quietly challenging it, Chef Olvera’s culinary voice is rooted in precision, restraint, and thoughtful innovation.

At MANTA, that vision is brought to life daily by Chef Abisai Sánchez, whose leadership in the kitchen reflects both discipline and instinct. With a deep understanding of the Pacific Rim’s culinary dialogue, Chef Sánchez translates Olvera’s philosophy into a dining experience that feels both refined and effortless.

Here, the experience begins with place. As the sun sets over Cabo’s iconic Arch, the landscape becomes part of the table. The rhythm of the ocean and the desert’s quiet elegance shape a cuisine that is at once grounded and expansive.

Each dish is crafted with intention, using the freshest ingredients from Baja and beyond — from delicate sashimis and vibrant ceviches to an A5 Wagyu T-bone chuletón prepared for tacos. The menu moves fluidly between Mexico, Peru, and Japan, guided by clarity of flavor and respect for product.
